The Joy Luck Club Peanut Butter Pie

Even though Rose's decision to make a pie for her soon-to-be ex-husband was questionable, do try making this for someone who deserves it. It's decadent and delicious!

Ingredients

1 1/2 c. finely ground chocolate sandwich cookies (about 18 cookies)
1/4 c. melted butter
1 1/2 c. + 2 Tbsp. whole milk (divided)
1 egg yolk
2 Tbsp. flour
1 Tbsp. cornstarch
1/2 c. sugar
1 tsp. vanilla
1 c. chunky peanut butter
1/2 c. heavy cream
1 Tbsp. powdered sugar
1 c. semi-sweet chocolate chips
1/2 c. salted roasted peanuts, crushed

Directions

For the crust:

Preheat oven to 350 degrees. Process cookies in a food processor until finely ground. Add melted butter and mix to combine evenly. The crust should be moist. Press crumb mixture evenly into a 9-inch pie plate, covering the bottom and sides and pressing firmly. Bake for 5-7 minutes, until shell hardens. Remove from oven and allow to cool.

For the filling:

Add flour and starch to 1/2 c. milk. Whisk and set aside. Heat 1 c. milk on medium. Temper egg yolk with a spoonful of hot milk and whisk into heated milk. Add sugar and milk/flour/starch mixture. Whisk for about 5 minutes until it thickens. Add vanilla and chunky peanut butter. Remove from heat, and set aside to cool.

Whip cream & powdered sugar to stiff peaks. Fold cream gently into peanut butter mixture. Add filling to crust and smooth.

For the ganache:

Combine chocolate chips and 2 Tbsp. milk in a microwave-safe container. Microwave in 30-second intervals, stirring well in between. Smooth top of the pie and garnish with crushed peanuts.

Refrigerate for at least 2 hours or overnight. Serve.
