Honey Granola

Once you try homemade granola, you'll never go back to store-bought. Experiment with different combinations of nuts, seeds and fruit - you can't go wrong!

Ingredients

3 c. rolled oats
1/2 c. unsweetened coconut
1 c. almonds
1 c. pecans
2 Tbsp. dark brown sugar
1/2 tsp. salt
2 tsp. cinnamon
1/3 c. coconut oil
1/2 c. honey
1 tsp. vanilla
1/2 c. dried fruit (dark and light raisins, dried cherries, dried cranberries)

Directions

Preheat oven to 300 degrees Fahrenheit.

In a large bowl combine oats, coconut and nuts. In a smaller bowl combine sugar, salt, cinnamon, coconut oil, honey and vanilla. Pour the wet ingredients over the dry and mix well.

Spread on a cookie sheet. Keep it close together if you like chunky granola. Bake at 300 degrees for 40 minutes total. After 25 minutes, stir in the dried fruit, then bake 15 minutes more.

Store in an airtight container for up to two weeks at room temperature.
