Cauliflower Rice Pilaf
Ingredients
6 c. cauliflower florets
3 Tbsp. olive oil
2 cloves garlic
1/4 c. chopped garlic scapes
1/2 tsp. salt
1/4 c. toasted sliced almonds
1/4 c. chopped fresh parsley
2 tsp. lemon zest
Directions
Pulse cauliflower florets 2 cups at a time in a food processor until chopped into rice sized pieces. Be careful not to get them too small.
Heat oil in a large skillet over medium high heat. Add garlic scapes and cook until tender, about 1 minute. Add garlic and cook 30 seconds more. Add the cauliflower rice and salt and stir. Cook until softened, about 3-5 minutes. Remove from heat and stir in almonds, parsley and lemon zest.
