Black Bean Stuffed Sweet Potato

A fun and unique way to use sweet potatoes and black beans that's the perfect main course for lunch or dinner.

Ingredients

2 large sweet potatoes
Olive oil
2 avocados, sliced
1 jalapeno, diced
1 large tomato, chopped
Salt and pepper
1 small red onion, diced
1 tsp. Apple cider vinegar
1/4 cup cilantro
1/4 cup parsley
1 lime
1 cup black beans
1 cup sweet corn

Directions

Drizzle olive oil over potatoes and bake in a 400 degree oven for one hour.

While potatoes are baking, combine tomatoes, jalapeno, salt, red onion, apple cider vinegar, cilantro, and parsley to a large bowl. Combine to make a salsa. Set aside.

In another bowl, combine, avocado, salt, lime, cilantro, parsley and a little of the salsa. Set aside

In a skillet, add blackbeans, sweet corn, and a pinch of salt. Heat through. Add a small amount of red onion, and set aside.

Once potatoes are done baking, remove from oven. Add black bean mixture. Top with tomatoes, and guacamole. Serve and enjo
