Ginger Peanut Sauce in Soba Noodles
A light and delicious ginger recipe from chef Katy Meyer.
Ingredients
1/4 cup fresh ginger, peeled and minced
2 cloves fresh garlic, minced
1/4 cup peanut butter
1 Tbsp. soy sauce
1 tsp. apple cider vinegar
1 tsp. maple syrup
8 oz. cooked soba noodles
1 tsp. toasted sesame oil
1 lime juiced
zest of one lime
salt
1/2 cup red cabbage
1/2 cup green cabbage
cherry tomatoes
fresh cilantro chopped
Directions
In a small bowl, combine fresh ginger, garlic, peanut butter, soy sauce, apple cider vinegar and maple syrup. Whisk together until combined.
In a large bowl, combine toasted sesame oil and soba noodles until noodles are coated.
In another large bowl, combine cabbage and lime juice together. Lightly season with salt and stir until cabbage is mixed. Add ginger peanut sauce and soba noodles. Stir until combined.
Plate in small bowl, garnish with tomatoes and chopped cilantro. Serve and enjoy.
