Comte Cheese Quiche
Ingredients
2 large onions chopped
6 Tbsp butter
Fresh ground pepper
Salt
1 tsp. fresh thyme
Puff pastry dough
1/2 cup heavy cream
2 cups comte cheese (substitute with gueryer)
Pinch of ground nutmeg
3 large eggs, lightly beaten
1/2 cup green onions , chopped
Directions
Preheat oven to 375 degrees.
In a large skillet melt butter at a medium heat. Add onions and cook until golden and translucent. Lightly season with salt, pepper and thyme.
Using a small ramekin that is slightly larger than your muffin tin, cut out six circles from the pastry shell. Add the shells to the muffin tin. Set aside in a refrigerator.
Add cooked onions to a large bowl. Add heavy cream, cheese and mix until blended. Add a pinch of ground nutmeg, eggs and stir until mixed. Finally add green onions.
Add the egg/cheese mixture to the puff pastry shell. Place in your 375 degree oven, and bake for 20-25 minutes, until the eggs are set and the pastry dough is cooked through.
Remove from oven and let set for 5 minutes to cool. Serve and enjoy!
