Barley Tabouli
This Eastern Mediterranean dish is usually made with bulgur, but it's delicious with barley too. It's a light and fresh tasting summer salad.
Ingredients
1 c. uncooked barley, prepared according to package directions and cooled
1 clove garlic, chopped
2 Tbsp. fresh lemon juice
3 Tbsp. extra virgin olive oil
1 tsp. salt
1 c. fresh parsley leaves
1 c. fresh mint leaves
1 large cucumber, peeled, seeded and chopped
1 medium orange bell pepper, seeded and chopped
16 oz. container grape tomatoes, quartered
3 large scallions, chopped
Directions
Mince the parsley and mint together on the cutting board finely. In a large bowl, combine the garlic, lemon juice, olive oil and salt, whisk to mix. Add the parsley and mint, cucumber, pepper, tomato and scallions to the bowl and stir, then add the cooled grain and toss to mix thoroughly. Serve at room temperature or chill, tightly covered, for up to a week.
