Roasted Red Pepper and Goat Cheese Rolls

Ingredients

2 large red peppers
olive oil
salt
1 cup fresh goat cheese
1 tablespoon honey (or to your personal taste
cracked walnuts
green onion
pepper

Directions

Put red peppers in roasting pan. Drizzle with olive oil and sprinkle with salt. Roast in 375 degree oven for 30 minutes. When done, cool them down in an ice bath, and peel outer skin off so only the flesh remains.

To make red pepper sauce, put skin from one pepper into blender with a pinch of salt andpepper, along with the oil left over from roasting pan. Blend until smooth.

To make goat cheesemouse, combine goat cheese, honey, cracked walnuts, salt, pepper, and a sprinkle of green onion.

To assemble, spread goat cheese mouse on red pepper flesh, roll up. Plate with red pepper sauce, and fresh tomato, olive, fresh chopped basil, and fresh arugula.
