Farmers Market Pita Snack
Chef David Baruthio combines his farmers' market purchases into a delicious appetizer.
Ingredients
1 shallot (chopped)
2 cloves garlic (chopped)
1 zucchini (chopped)
1 yellow summer squash
olive oil
pita bread
roasted red pepper hummus
green onion (chopped)
tomato
basil
radish
Kalamata olive
Directions
Add olive oil to pan along with onions, garlic, zucchini, and squash. Sprinkle with salt and pepper.Sautegently.
Toast pita bread on low heat in non-stick pan.
Spread pita with hummus. Sprinkle on cooked vegetables, green onion, tomato slices, chopped fresh basil, radish slices, Kalamata olive slices, and a touch of pepper. Slice and serve.
