Green Bean Salad
Ingredients
green beans
basil
1 cup kosher salt
6 tablespoons butter
1/2 cup lemon juice
olive oil
pinch of sugar
pinch of salt
radish
leek
grape tomatoes
Directions
Bring a gallon of water to boil. Sprinkle in salt. Drop green beans into salted boiling water to blanch.
Whisk vinegrette ingredient together.
Also blanch the basil.
Puree basil in blender to make into a sauce.
Cut up radish, leek, and grape tomatoes. Put in a bowl, and lightly dress with some of the vinaigrette.
Heat up skillet, add blanched green beans. Add a drizzle of water. Add some of the basil puree. Bring to simmer. Add butter. Keep stirring butter as it melts.
Plate green beans with butter basil sauce. Garnish with salad ingredients.
