Cucumber Noodle Salad

Ingredients

1 cup dates
1 cup ginger chopped and peeled
2 tsp. Dijon mustard
3 cloves of crushed garlic
Zest of 1 lime
Juice of 1 lime
1 Tbsp toasted sesame oil
2 Tbsp soy sauce or liquid aminos
1 Tbsp water
1 pinch chili flakes
3 medium sized cucumbers
1 cup shredded carrots
1 cup cherry tomatoes
1/4 cup fresh cilantro, chopped
1 tsp sesame seeds

Directions

In a food processor, add dates, ginger, mustard, garlic and fresh squeezed lime juice, zest, toasted sesame oil, soy sauce, salt, and chili flakes. Blend until pureed and set dressing aside.

Using a spiralizer or a shredder, shred all of the cucumber. Serve the cucumbers, shredded carrots, and add the ginger dressing. Top with tomatoes, cilantro, and sesame seeds. Serve and enjoy!
