Cabbage Gratin
Ingredients
1 head cabbage
1 lb. Gruyere cheese
1 pkg. club crackers
2-3 tablespoons butter, grated into cracker crumbs and mixed
salt/pepper
3 eggs
3 c. half and half
Directions
Chop cabbage and blanch by putting in pan with a small amount of salted boiling water for about two minutes (with lid on). Drain. Pat dry in kitchen towel (get as much moisture out of the cabbage as possible).
Butter ramekin dishes. Layer in cabbage and cracker crumbs (2 layers). Combine half and half, eggs, and salt and pepper. Pour over layered cabbage. Top with grated cheese. Bake at 400 degrees for 15 minutes
