Cabbage Soup
Ingredients
2 lbs. ground beef
1 large yellow onion
3 tsp. minced garlic
2 cans diced tomatoes w/juice
1 15oz can tomato sauce
1 qt. beef stock
2 c. sliced carrots
1 large head cabbage cored & rough chopped
1-2 bay leaves (be sure to remove before serving)
1 tsp. salt
1/2 tsp. pepper
Water (as needed to thin soup)
Directions
Brown ground beef in large soup pot. Drain. Add one large chopped onion. Add garlic. Add salt and pepper. Stir. Add in carrots. Combine. Add beef stock, diced tomatoes, tomato sauce, bay leaf. Stir. Add water if too thick. Put lid on, and bring to a boil.
Add cabbage, more salt and pepper, stir, and put lid back on. Let simmer for at least 10 minutes.
Serve hot and enjoy!
