Bacon Jam
Ingredients
1 1/2 lb. bacon
2 small onions, chopped
3 cloves garlic, crushed
1/2 c. brown sugar
1/4 c. balsamic vinegar
1 c. brewed coffee
salt and pepper
Directions
Saute bacon until brown. Transfer to a plate lined with paper towels to remove grease. Discard all but 1 tablespoon of grease and use this to saute onions and garlic until they are soft. Add bacon, sauteed onion and garlic, and all remaining ingredient to slow cooker. Cook on high until mixture is boiling. Reduce heat to low and cook for 3 - 4 hours, or until mixture is thickened. Leave the mixture chunky or use an immersion blender or food processor to reach desired consistency.
Bacon jam can be stored in the refrigerator up to 4 weeks, but if it lasts that long this may not be your jam.
