Potato Latkes

Ingredients

2 large baking potatoes
1 large onion
2 eggs
1/2 c. matzoh meal or flour
2 tsp. kosher salt
1/2 tsp. black pepper
Peanut or vegetable oil for frying

Directions

Using a food processor, grate the potatoes and onion. Transfer the mixture to a clean dishtowel and squeeze out as much liquid as possible.

Add the eggs, matzoh or flour, salt and pepper to a bowl. Mix well, then add the potatoes and onions. Mix that well too.

In a heavy bottomed pan over high heat, pour in about 1/4 inch of oil. Once the oil is hot, drop the batter into the pan, and use a spatula to flatten drops into disks. Flip when the edges are brown and crispy, after about 5 minutes. Cook until second side is deeply browned. Transfer to a paper lined plate to drain and sprinkle with salt. Repeat with remaining batter. Serve with applesauce and sour cream.
