Sweet Potato and Lentil Quesadillas
Ingredients
1 cup cooked lentils
2 cups sweet potato puree
1 cup chopped onions
1 tsp. garlic
1/4 cup extra virgin olive oil
1/2 cup chopped pecans
1 Tbsp. chili powder
1 tsp. cumin
2 Tbsp. chipotle pepper
1/2 cup salsa or 3/4 cup diced tomatoes
8 tortilla shells
2 cups cheddar cheese
salt to taste
Directions
In a medium pan, add heat olive oil to medium heat. Add onions and garlic and cook until transluscent.
In a bowl, add sweet potato puree and mash. Add it to the onion mixture. Then add the lentils, chopped pecans, chili powder, cumin, and chipotle pepper, and salsa. Heath through until thick.
In a medium frying pan, add a tortialla shell on medium heat. Add cheese, and 1/4 of sweet potato mixture. Add another tortilla shell and cook on both sides until cheese is melted. Serve with salsa and enjoy!
