Zucchini Pasta
Ingredients
1 jar tomato sauce
1/2 cup coconut milk
1 tsp. olive oil
Salt and pepper to taste
1 tbsp basil, chopped
1 tsp. chives, chopped
2 medium zucchinis
Calamata olives
Zest of lemon
Directions
In medium pan, combine tomato sauce, coconut milk, olive oil, salt, pepper, basil and chives. Heat until warm until warm.
Remove zucchini skin. Then shred so zuchinni so that it is similar in thickness to a linguini noodle. Add to tomato sauce, and warm.
Add zest of lemon and a few olives. Serve and enjoy!
