Broccoli Salad with Blue Cheese and Bacon Dressing
Ingredients
1 broccoli head
6 slices of bacon
1 Tbsp rendered bacon fat
1/2 cup mayonnaise
1 tsp mustard
1/2 cup buttermilk
1/4 cup blue cheese
1 Tbsp. white whine vinegar.
1 Radish sliced thinly
Salt and Pepper
Directions
Cook broccoli in boiling water for approximately 2 minutes. Immediately place broccoli in an ice bath, and remove from ice water. Set aside in a bowl.
Chop bacon roughly and cook in a frying pan until crispy.
As bacon is cooking, whisk together mayonnaise and mustard. Incorporate buttermilk. Add blue cheese to taste. Then add bacon fat and white wine vinegar to the dressing mixture.
Plate cooked broccoli and drizzle with salad dressing. Add bacon and radish. Serve and enjoy!
