Bacon Gougeres

Ingredients

1 stick butter
Bacon fat, rendered
1/2 teaspoon salt
1 cup milk
1 cup all-purpose flour
4 large eggs
1 cup grated sharp Cheddar
1/2 cup cooked and finely chopped bacon
1/2 cup green onions, chopped
Freshly ground black pepper

Directions

Preheat the oven to 400 degrees fahrenheit. Line a baking sheet with mat or parchment paper.

Add 1 cup milk, rendered bacon fat, butter and salt, in a medium sauce panand bring to a boil over medium high heat. Lower the heat to medium and add the flour all at once. Stir constantly with a spoon until it forms into a dough ball.

Remove the pan from the heat and let cool for a couple of minutes. When the dough is warm to the touch, start adding eggs one at a time. The dough should become creamy. Stir in the grated cheese, bacon, green onion and pepper.

Spoon out small balls (about a tablespoon) of the dough onto the baking sheet. Cook for 25 minutes until golden brown.
