Holiday Soft Sugar Cookies

Ingredients
Directions
Preheat oven to 350. Line a baking sheet with parchment and set aside.
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter and sugar until light and fluffy., Add egg, egg yolks, and vanilla. Mix until combined.
Add baking soda, salt, vanilla pudding and flour. Mix until combined
If using sprinkles, add the sprinkles and mix until incorporated.
Using a scoop, place dough onto baking sheet 2 inches apart. If you'd like to roll cookies in additional sprinkles, go for it! Flatten cookies slightly with the back of a measuring cup before baking.
Bake for 8-10 minutes or until cookies are set (everyone's oven will be slightly different, so cooking times may vary slightly).
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to wire rack to cool. Enjoy as is, or frost with buttercream.
Buttercream Ingredients
1 cup butter (2 sticks)
8 cup powdered sugar
1/2 cup milk
2 tsp. vanilla
Buttercream Directions
In the bowl of stand mixer fitted with a paddle attachment, beat the butter until soft. Slowly add powdered sugar. Add milk and vanilla. Mix until it reaches desired consistency.
