Fried Brussels Sprouts with Chipotle Mayo

Ingredients

1 1/2 cup mayo
1 oz ketchup
1 Tablespoon lime juice
1 oz sriracha
Cooking oil
2 pounds Brussels sprouts.

Directions

Fill a large pot with a few inches of vegetable oil. Fit with a thermometer and heat oil to 400 degrees Fahrenheit.

In a mixing bowl, whisk together mayo, ketchup, lime juice and sriracha. Set aside in a bowl.

When the oil is 400 degrees Fahrenheit, add 1/2 of the Brussels sprouts and turn the heat to high. Stir sprouts while they are frying. When they float to the top and have a nice golden brown color, about 3 minutes, remove them with a slotted spoon and transfer them to a paper-towel-lined sheet tray.

Serve and enjoy.
