Bison Burger
A succulent bison burger from chef Ian Robertson.
Ingredients
8oz ground bison
1 vine ripe tomato
1 green leaf lettuce
1 brioche roll
Salt/ pepper to taste
Directions
Handle the meat as little as possible - the more you work it, the tougher it gets. Add salt and pepper to taste.Shape meat into burgers about 3/4 inch thick.Using your thumb, make a shallow impression in the center of each burger to prevent puffing up during cooking.
Place burgers on the grill, cook until no longer pink inside, turning once, about 6 - 8 minutes per side.A thermometer should read 160F.
Add your favorite toppings. Serve and enjoy.

1 cup mayo
1/4cup whole grain Dijon
