Asparagus Soup
Ingredients
1 pound fresh asparagus cut into 1 inch pieces (reserve 8 tips for garnish)
1 Tablespoon garlic
2 cups chicken or vegetable broth
1/2 cup chopped onion
2 Tablespoons butter
1/2 cup heavy cream
salt and pepper to taste
Directions
Heat large sauce pan to medium high heat. Melt butter and add onions and cook until onions are translucent. Add garlic and cook slightly longer. Add broth and bring to a boil.
Add reserved asparagus tips to boiling broth and blanch, about 2-3 minutes. Remove tips and add to ice water. Save for garnish.
Add 1 inch cut pieces of asparagus to the boiling broth and simmer uncovered until asparagus is tender, about 15-20 minutes.
Puree soup in a blender until smooth. Return to sauce pan and stir in heavy cream. Season with salt and pepper to your preferred taste.
Serve and enjoy.
