Watermelon Salad with Mascarpone Dressing
A refreshing salad using a summertime favorite.
Ingredients
1/2 cup baby kale
fresh mint leaf
1/4 cup Italian sweet parsley
zest of lemon or lime
salt to taste
pepper to taste
4 Belgian endive leaf
1/2 cup prosciutto
1/4 cup radish sliced
olive oil
1 small watermelon, seedless
Directions
Cut watermelon into 1 inch cubes. In a bowl, add kale, mint, parsley, salt, pepper, and zest together.
Mix together mascarpone, goat cheese, and feta cheese. Add mascarpone mixture the kale salad. Top with watermelon, prosciutto, and sliced radishes. Drizzle with olive oil.
