Pumpkin Bread Pudding with Caramel Apple Sauce
Nothing like a warm bread pudding made from our favorite squash! The caramel apple sauce adds just the perfect amount of sweetness to satisfy every sweet tooth.
Pumpkin Bread Ingredients
Preheat oven to 350 Degrees
Mix flour, salt, baking soda, baking powder and spices in a separate bowl.In a standing mixer with paddle, beat butter, sugar, and oil at high speed until fluffy.Add pumpkin and mix, adding eggs one at a time until incorporated.Slowly add flour mixture and mix until incorporated.Transfer mix to a greased loaf pan and cook at 350 degrees for 70-75 min. Check with toothpick in center to be sure it's done.
Bread Pudding Ingredients
2 cups heavy whipping cream
1 cup whole milk
6 large egg yolks
1/2 cup sugar
1 whole vanilla bean
4 Tbsp. maple syrup
2 Tbsp. Bourbon
1 1/2 cups pumpkin puree
1 cup caramel sauce
Directions
Cube and toast pumpkin bread, transfer to a lightly buttered baking dish. Add heavy whipping cream to a saucepan, bring to medium heat. Add vanilla bean. Add whole milk and bring to a simmer. In a separate dish, mix egg yolks, pumpkin puree, sugar, and maple syrup.
Add pumpkin mixture to simmering cream mixture. Let simmer for another minute until thickened, then strain custard mixture into a new bowl. Pour custard mixture over dried pumpkin bread evenly. Let bread pudding mixtures sit and soak for 15 minutes. Bake in oven at 350 degrees for 45-50 minutes.
Caramel Sauce Ingredients
1/2 cup water
2 cups sugar
1 Tbsp. apple cider vinegar
1 cup heavy whipping cream
1 cup apple cider
1 Star Anise
1/2 Tbsp. whole cloves
1/2 tsp. ginger
1/4 tsp. nutmeg
2 Tbsp. bourbon
Vanilla Ice Cream
Directions
In a saucepan, add water, sugar, and apple cider vinegar. Cook over high heat and let caramelize. Approximately 8 minutes.
In a separate sauce pan, add heavy whipping cream, apple cider, star of anise, whole cloves, ginger, nutmeg. Stir and and let simmer.
Strain cream mixture into a separate bowl. Slowly add cream mixture to the caramel mixture. Add bourbon and let thicken.
Remove bread pudding from oven, and let cool. In a glass, add 1 serving bread pudding, pour sauce over, and add a side of ice cream. Enjoy!
