Apple and Onion Marmalade

Ingredients

2 Tbsp. extra virgin olive oil
2 1/2 cups onions, julienned (about 2 large or 4 small onions)
12 oz. porter or another dark beer
1/2 cup water
3 Tbsp. maple syrup
1 tsp. salt
1 tsp. black pepper
3 apples, Honey Crisp or Gala, medium diced
1/4 cup calvados or apple cider

Directions

Heat the oil in a medium sauce pot.Add onions and cook until caramelized, about 3 minutes.Deglaze with beer, and then add water, maple syrup, salt and pepper.Cook over medium low heat until the liquid has reduced by three-fourths, about 35 minutes.Add apples and calvados and cook for another 10 minutes, stirring occasionally, until reduced.Adjust seasoning with salt and pepper.
