Cantaloupe Bread
Chef Katy Meyers fun spin on a spice bread using cantaloupe.
Ingredients
2 cups cantaloupe (about 1/2 a cantaloupe)
3 cups all purpose flour
1 1/3 cup (270g) sugar
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 tsp. cinnamon
1/2 tsp. ground ginger
1/4 tsp. cardamom
2 Tbsp. flax meal plus 6 Tbsp. water (or two large eggs)
1 cup vegetable oil
2 Tbsp. lime juice
1/4 cup maple syrup
1/2 cup milk
1 tsp. vanilla extract
1/2 cup cantaloupe
1 tsp. Lime juice
1 1/2 cup powdered sugar
Directions
Grate cantaloupe and set aside. In a large bowl, mix flour, sugar, baking soda, baking powder, salt, cinnamon, ginger, and cardamom. In another bowl mix, flax meal mixture, vegetable oil, lime juice, maple syrup, milk, and vanilla extract. Add wet ingredient to dry ingredients. Stir in cantaloupe. Grease and flour two 8 x 4 inch loaf pans.Pour batter into prepared pans. Bake for 45- 60 minutes or until a toothpick inserted in the center comes out clean.
For the glaze, cantaloupe to a food processor and puree. Mix cantaloupe with powdered sugar and lime juice. Stir to combine. Drizzle glaze over bread. Serve and enjoy.
