Cantaloupe Sweet Potato Salad
A fresh and flavorful cantaloupe recipe from chef Katy Meyer.
Ingredients
1/2 red onion, thinly sliced
1 Tbsp. balsamic vinegar
1 can black beans
1 1/2 cup roasted sweet potatoes
Salt and pepper
1 cup cherry tomatoes, halved
1/2 cup fresh cilantro, chopped
1/2 cup fresh basil, chopped
Zest of 1 lime
1/2 cup olive oil
1/4 cantaloupe, sliced
Directions
In a small bowl macerate red onion in the balsamic vinegar. Set aside.
In a large bowl combine black beans, sweet poatoes. Add tomatoes and chopped herbs, lime zest, olive oil, and mascerated red onions. Stir to combine.
Add melon a plate. Top with sweet potato black bean minxture. Season with salt and pepper. Serve and enjoy.
