Seared Bok Choy in Mushroom Sauce

Here's a bok choy recipe from master chef David Baruthio.

Ingredients

1 lime juiced
1/4 cup palm sugar (or granulated sugar)
1 1/2 cup cocunutmilk
Fresh ginger, chopped
1 clove garlic, sliced
2 baby bok choy, halved
Sesame oil
1 cup white mushrooms
1 red chili pepper, sliced
1/2 cup vegetable stock
1 Tbsp. cashews
2 Tbsp. soy sauce
1 Tbsp. rice vinegar
Fresh cilantro, chopped
2 hard boiled eggs,
green onion

Directions

Add Juice, palm sugar, coconut milk, ginger and garlic to a sauce pan. Bring to a simmer.

Meanwhile heat sesame oil in a frying pan and sear the bok choy. Season with salt. And heat throug until bok choy is softened. Remove from heat and set aside.

In the same frying pan add mushrooms and season with salt. Add 1tsp. crushed garlic, chili pepper, and ginger. Heat through and then add the vegetable stock. Cook until mushrooms are softened.

Add the mushroom mixture to the coconut milk mixture. Stir and cook for 5-6 minutes ntil reduced slightly.

Meanwhile, in a clean frying pan, add the cooked bok choy to a medium high heat. Add the cashews and soy sauce, and rice vinegar.. And Cook until liquid has reduced.

To plate, add the coconut/mushroom mixture to a bowl. Add the seared bok choy and top with a soft boiled egg and cilantro, and green onion. Serve and enjoy .
