St. Nick Cookies

Ingredients
- 2 1/2 sticks margarine
- 1 cup brown sugar
- 3/4 cup white sugar
- 1 egg
- 2 teaspoons cinnamon
- 1/2 teaspoon ground cloves
- 1 teaspoon soda dissolved in 2 Tablespoons milk
- 4 cups flour
Instructions
Mix margarine and sugars. Add other ingredients in order given. Form into two "rolls" or "loaves" and chill for at least an hour (these freeze well also). Slice thinly and bake at 375 degrees for 10 minutes.

St. Nick cookies are made in the Netherlands on Dec. 5, Sinterklaas Eve, to welcome the saint himself. In Dutch bakeries, they are pressed into elaborate molds, but for home baking, this recipe is much easier. While you can find St. Nick cookies in Pella bakeries year-round, I always make them for the Christmas season.
